I have been reflecting on my preference in pickups shifting towards lower output, vintage wind pickups. They have an openness and clarity that works really well. But they don't push the front end of the amp as well. So I decided to experiment with using an EQ block to simulate the increase in level and the shift in EQ that a humbucker provides. I use a strat loaded with a 7k output tele bridge pickup and then compare it to a tele loaded with a PAF style humbucker at about 8k. Then a use a Graphic EQ (sorry for typo in video, it is a GEQ block) to mimic the tone and feel to the best of my abilities.
By my estimation this means that a lower output pickup is a better choice. You can use an EQ to mimic the way a hotter pickup pushes an amp, but you can't take a hot pickup and cut it back to achieve the same openness and clarity.
