At 3:20 Guthrie talked about A Dominant 7. He is actually talking about a whole step back rather than a minor 3rd away(which is a 7b away) so he’s just using the A Dorian scale.
Guthrie basically says when you’re playing A dominant 7 you can use Gmaj7 over it, which is just A Dorian.
When he talks about playing Cmaj7 over Am he’s using the relative major chord of Am.
